I thought the ideas about Kaya crafts are great- she did always strike me as a non-girly girl too.

Some of Molly's crafts are also non-girly (from her craft book), and boys tend to like to hear about the WWII time period. I thought the following crafts sounded good for boys and girls: patriotic pinwheels, victory garden in a jar, V-day parachute, scrap paper jar. A Molly-themed party goes well with July too.

I'm not sure what doll(s) you are looking to really base crafts and such on, though.

I will send a word of encouragement- my mom taught 6th grade and I came in with Felicity and all her things and did a short discussion with the kids about colonial history (which they'd been studying) and then did crafts all day. We did marbling paper, stitching handmade journals, cooking (and eating!) journey cakes, and playing some colonial games, among other things. All the kids loved it and had a blast. The 12 yo boys were very impressed with the colonial clothing and informed me that the breeches were "tight" (i.e., totally awesome and cool). LOL- and these were "tough" little boys from gang areas. You should have seen how much they liked Lissie and all her stuff! So you never know...

Kit also has a tomboyish charm to her-baseball, robin hood, treehouses, writing stories...
Kit is the only American Girl with a "boy" friend-Stirling(I think when they grow up the 2 of them might even get Married!). Maybe Kit's Friendship Fun book would have some more unisex things, unlike Samantha and Ruthie who are total girly-girls.

Think of Ruthie, the girly girl, Stirling the boy, and Kit the in between tomboyish-girl. What kinds of things did they do together? Maybe that could give you some ideas...
